Minestrone Soup

Prep: you gotta chop some veggies
Time: less than you would think for such a hearty soup!
Taste: LOVE
From: loosely based on Moosewood Cookbook's recipe 
Note: my baby eats this (inhales this?) with his hands sans broth




Minestrone Soup

1/2 large onion, chopped
2 celery sticks, chopped
2 carrots, peeled and chopped
1 medium zucchini, chopped
3 garlic cloves, minced
1 green bell pepper
14.5 oz can tomato sauce (plain or with Italian spices)
2 cans of water (from tomato sauce)
1/2 cup elbow macaroni of your choice
14.5 oz can rinsed kidney beans
Dry spices:
1 teaspoon each: basil, oregano, salt
1/2 teaspoon pepper


Do the typical soup thing putting this together. Simmer a while, until noodles are done. It's really good. Try not to burn your tongue.
