#30 Tunisia: sweet potato stew
My mom made this one! We have not had a functioning refrigerator in three days. This is her favorite soup. I think it comes from a Dr. Fuhrman recipe. Keller also loves it.
I read about Tunisia to make sure this is legit, and, yes, apparently this spice combination is "a thing" there. Note: yes, it has peanut butter. That is a HUGE thing in Africa. I will be posting many, many more peanut stews in the future!
Ingredients:
1 onion, chopped
1 or 2 jalapeños, deseeded and minced
1-2 teaspoons fresh ginger, grated
2 garlic cloves, minced
2 teaspoons cumin
1/2 teaspoon cinnamon
1/4 teaspoon red pepper flakes
1/4 teaspoon ground coriander
5 cups sweet potatoes or yams, peeled and diced
2 14.5 ounce cans of diced tomato
1 can rinsed green beans, cut 1"
3 cups vegetable broth
1/4 cup peanut butter
water or broth as needed
completely optional: 1/4 cup fresh cilantro leaves, chopped
Directions:
In a medium/large soup pot, sauté first four ingredients with 1/3 cup water for 5 minutes. Add spices (next four ingredients). Simmer one more minute. Then add the rest of ingredients, except the cilantro. Simmer 30 minutes, or until sweet potatoes are tender. Add more water or both to fill up the pot, as you like. If using, add cilantro right before serving.
