#31 Bulgaria: shopska salata


 


This is seriously one of my all time favorite salads that I have ever had. Ever. So so so good! And, it came from just a few internet searches! Just google "Bulgaria shopska salad" and you can easily see where I got the inspiration for this AMAZING SALAD that I want to make EVERY DAY!

Shopska Salata

(double this if you want a giant family-dinner sized salad... this version will feed 1-2 people)

Ingredients:

2 roma tomatoes, diced small
1/2 cucumber, diced
1/2 red pepper, diced
1/2 green pepper, diced
2 green onions, chopped
2 Tablespoons flat leaf parsley, minced
2 Tablespoons white wine vinegar, or more to taste
salt & pepper

Directions:

Combine. Let sit a few minutes before eating. Add oil or feta cheese if you are into that. I thought this was incredible on it's own! I used Wegmans White Wine Vinegar, although most recipes call for red wine vinegar. Regardless, it's very, very good!
