W African Peanut Stew

Prep: takes time and effort but worth it completely
Time: 60ish minutes
Taste: MY FAVORITE SOUP IN THE WHOLE WORLD
From: a blend of several internet recipes
Note: the cayenne pepper and peanut butter are key! oh, and you need an immersion blender or food processor.



West African Peanut Stew

Onion, 1/4 cup diced
Carrot, 1/2 cup chopped
Celery, 1/2 cup chopped
Ginger, 1" grated
Garlic, 2 minced cloves
   Sauté these all up in a medium soup pot. Stir often, adding water or broth to keep vegetables soft.

Add:
Sweet potato, 1 large, diced
1 1/2 cups water or broth
1/2 teaspoon each: salt, pepper, cayenne

Keep stirring, letting simmer. Keep adding up to 2 to 3 cups water.

After vegetables are tender, add:
Peanut butter, 1/2 cup

Simmer for 5 minutes, then use immersion blender to combine all, or use food processor. I always use the food processor.


Optional additions:
Peanuts or other nuts, 1/2 cup (I often add raw cashews)
Fresh Cilantro leaves YES YUM

This soup is so weird and so good. It totally relieves me of cravings for unhealthy things! I often make a double batch and freeze a lot of it in mason jars.
