Sushi Salad

Prep: takes some effort
Time: eh, a little on the longer side for a salad
Taste: very good and filling, except I don't like miso
From: inspired from Isa Chandra Moskowitz's sushi salad
Note: frozen edamame- I get from Trader Joe's, also- you need miso


Sushi Salad

Romaine lettuce
Carrots, cut into little sticks
Cucumber, sliced
Edamame, boiled and cooled
Rice, cooked (I used brown)
Sesame seeds

Dressing:
3 tablespoons each: miso, vinegar
1 tablespoon each: agave, oil
1 bunch of scallions
1" fresh ginger, peeled
1 garlic clove
2/3 cup water, plus more to thin if you want

Put in food processor until smooth.

Assemble salad.
