Time: medium fast
Taste: very good but not as good as Alladin's
From: my friend Amber taught me how to cook this around 2008
Note: spinach or baby spinach works
Spinach
4 garlic cloves, minced
2 teaspoons oil
1 gigantic bag or box of spinach (rinse and de-stem, if you want)
1/2 teaspoon salt
a few cranks of pepper
What to do:
Heat oil in a pan. Add 2 cloves minced garlic. Stir around for a minute. Add half the spinach. Stir and let simmer. It will reduce a LOT. Then, add the rest of the garlic, and spinach. After it cooks down for three-isa minutes, add the salt and pepper. Stir and simmer a few more minutes. That's it.
THINGS TO DO WITH IT:
1. Add to penne with sun dried tomatoes for a pasta dish
2. Add basil and use it as a layer in lasagna
3. Eat plain. It's delicious.
4. Use on top of hummus on chips or crackers.
Another plug: Aladdin's restaurant in Schoen Place or on Monroe Ave (or in Ithaca, if you are out that way) make this SO AMAZING I CAN'T WAIT TO GET HOME AND EAT IT WITH UTENSILS so I usually eat it in the car with my fingers. It's that good. So the next time you are at Aladdin's- try their version!
