Sweet Potato Butter Bean Barbecue Burgers

Time: a little intense but not awful really.... it does take a while to bake!
Taste: I ate them all in 24 hours, they were TOO DELISH to leave in fridge*

Note: I wanted to use garbanzo beans but I was out, and had butter beans. Either will work!


*actually, I ate ten of them, and my 11 month old ate four of them.  



Sweet Potato Butter Bean Barbecue Burgers

Step 1:
Bake a sweet potato. I placed one whole in my oven for about 30 minutes at 350F and it was soft throughout. You can do this, or cut into chunks and roast, or whatever. Just- bake up a sweet potato! And keep that oven on for later!

Step 2: 
The beans. As I mentioned earlier, I wanted to use garbanzo beans, but I didn't have a can. I did have butter beans though- and wanted to use them up. So I rinsed the can several times and pulled a few bean skins off (you'll know what I mean if you rinse butter beans). So, step two: ready a can of beans.

Step 3:
Get the rest of your ingredients ready:
     1/2 cup flour (I used Bob's Red Mills gluten free all purpose but you can use whatever you want!)
     1/2 yellow pepper, 1 carrot, 1 stick of celery- put in food processor and chop up fine*
     1/3 cup barbeque sauce (I used Dinosaur BBQ Sensual Slathering Sauce and it is amazing) 
     dash of salt if you want

     *or whatever veggies you want!

Step 4:
Mix all ingredients together in a bowl. Really mix and mash the beans up. I guess you could put it all in a food processor- but  I wanted mine a little chunky- so I did not. 

Prepare a cookie sheet with parchment paper. Spray with spray-oil. Drop 6 or 7 spoonfuls of mixture. Place in oven for 15 minutes. Remove, flip, press down into patties, and bake 30-40 minute more, until firm. It will take a while! Then, repeat with the "batter" you have left. Or, do this twice at the same time if you have a fancy large oven and two cookie sheets. :)  (Read: I do not have a fancy large oven or two cookie sheets.)

Enjoy! I ate mine with baked potato wedges, boiled green beans, and more barbecue sauce. Very yum!

Oh- just a note- if you follow recipe as I did, I did the math- 60 calories per burger! So eat a few!
