Syrian Salad

taste: AMAZING YOU NEED THIS SALAD

Place in a large bowl (I like to use a giant stainless steel mixing bowl):

1 head/heart of romaine, chopped very well
1 large tomato, chopped into small pieces
1 small or 1/2 large cucumber, chopped into small pieces
1 Tablespoon of fresh flat leaf parsley, minced or chopped fine (not more than 1 Tablespoon!)
1 medium garlic clove, smashed with a mortar and pestle
1/8 teaspoon salt
a few cranks of black pepper
1 teaspoon to 1 Tablespoon of oil, depending on how much you like oil
1 teaspoon dried mint
3 Tablespoons bottled 100% lemon juice (I'm sure you could use fresh if you want)


That's it. In the bowl. Mix it around. Pour into serving bowls. It's amazing!!!!!

Be careful not to overdo the salt or garlic or fresh parsley. The first few times... I definitely did. You might have to make it a few times to find your "happy amount" of each. But... the above WORKS FOR ME!!!!

Serves 4 small salads, or two big. I've been known to eat the entire thing in one sitting.... if I'm being honest....
