Note: it's very, very, very tasty!! oh, and you need special rice! see below.
This rice is so, so, so good.
It's available at the International Market on Jefferson Road. Very reasonable price for how much you get. This rice is seriously a game changer for me- so much better than "American-ized rice," let me tell you!! It melts in your mouth. Truly. Melts. So good!
PART ONE Ingredients:
1 cup rice, above: soaked and rinsed and soaked and rinsed in water for 1-3 hours
1 bag frozen baby lima beans
1/2 ish cup fresh fill, minced
a spoonful of butter (I use vegan Earth Balance butter)
a dash of salt
PART ONE Directions:
After the rice is sufficiently rinsed, boil 2 cups of water, add rice, and simmer. After 10 minutes, add the lima beans, and add a tad more water, if needed! The goal is to use up the water- and not have to drain later. Use your judgement! I had to scoop out a little water the first time I did this. Hey, it worked.
When the rice and lima beans have absorbed all the water and seem done (taste it!), add a spoonful of butter, the fresh dill, and a dash of salt. Mix. Perhaps add more salt. That's it! It's done!
It is SO GOOD warm, and SO GOOD chilled! AND if you want.....
PART 2 Ingredients:
The above, plus...
baby lettuce mix
vegan ranch dressing (I enjoy Hampton Creek "Just Ranch")
PART 2 Directions:
Assemble. That is all.
Try not to eat too fast.
