#8 Mali: West African peanut stew
West African Peanut Stew
Ingredients:
onion, 1/4 cup diced
carrot, 1/2 cup diced
celery, 1/2 cup diced
ginger, 1" grated
garlic, 2 minced cloves
sweet potato, 1 large or 2 small, diced
2-4 cups water or broth (use more if needed)
salt & pepper
cayenne pepper, 1/2 teaspoon
1/2 cup peanut butter
peanuts or cashews for serving
cilantro leaves for serving
Directions:
Saute the first five ingredients. Add the sweet potato and water or broth, and simmer until sweet potatoes are very soft. Use an immersion blender to blend (or, transfer to food processor or blender to bend). Over medium heat, add salt and pepper, and cayenne pepper, and the peanut butter. Simmer until completely blended. Serve with spinkled peanuts, cashews, and cilantro leaves if wanted.
