#22 Australia: chocolate crackles
I was not sure that I would be able to make anything from Australia gluten free and vegan, because, according to the internet, Australian cuisine is 99.9% meat and gluten! However, I found this recipe on a wonderful new resource website I discovered, entitled "Food in Every Country." It only features 50ish countries, but, it is very helpful so far, with research and multiple recipes per country.
Chocolate Crackles
This makes 6 dessert cups. Double or triple if you want more. They are quite good! Although anything with butter and chocolate generally is.
Ingredients:
4 tablespoons butter (I used Earth Balance vegan butter)
1 cup rice crispies (I used a super weird gluten free brand)
1/4 cup powdered sugar
1 Tablespoon cocoa powder
Directions:
Over medium heat in a medium soup pot, melt butter. Remove from heat and add the rest of the ingredients. Stir to combine. Divide into 6 muffin tin paper liners. (I did this in a muffin tin, but I supposed you don't have to.) Refrigerate until cool.
