Fajita Stew

Prep: very easy for soup
Time: half hour-ish
Taste: So good!
From: a blend of several internet recipes
Note: this is very similar to "Taco Soup"(recipe earlier- see "Mexican" recipe tab over to the left)


Fajita Stew

In medium soup pot:

One small onion, diced
Two bell peppers, sliced like you would for making fajitas

Saute in broth or water or oil until peppers start to get soft.

Add:

one large 28 oz diced tomatoes
one 14.5 oz can rinsed pinto beans
one packet fajita seasoning (like that you would mix with chicken for fajitas!) 


Simmer for 30 minutes or more, until peppers are soft.

For fun presentation, slice a corn tortilla up and bake in a toaster over (or oven) for about five minutes until crispy. Layer and eat up!  I've done this spraying the tortilla with oil and not, and both come out just fine. :)
