Stir Fry and Noodles

Prep: fairly easy, but requires some chopping
Time: not too bad
Taste: SO GOOD
From: many, many years of stir fry attempts
Note: I used spirals as noodles so K can eat it (he LOVES this)



Stir Fry & Noodles

Step 1: 

The noodles... cook them up. However much you want. Whatever kind of noodles you want. K likes spirals or elbows or penne. Well, he likes ANYTHING, but those are the kind he can eat easily. I use brown rice pasta, but you can use whatever kind you want.

Step 2: 

The veggies... chop them up. For this batch, I used a half onion, 3 carrots, a half head of broccoli, sugar snap peas, and a half each of a red and yellow pepper.

Heat a large wok or stove top baking pan to high heat. Add the "hard" vegetables first, and stir around. I just use broth and soy sauce, but you can use oil if you feel like it. After a few minutes, add the "soft" vegetables- stirring often. From here- you can continue "frying" them, or- what I like to do is pour a half cup of water in and cover it up... the vegetables "steam" and get soft. Great for babies to eat easier! So anyway, just cook up those vegetables.




Step 3: This can be done during Step 2 if you plan it right. :)  

The Sauce! Once the noodles are done, put them in a drainer over the sink. Use the same pan to add:

1 cup water
2 tablespoons nut butter of your choice (peanut, almond, etc.)
2 tablespoons soy sauce (we use gluten free)
2 tablespoons agave (or brown sugar)
OPTIONAL: one tablespoon hot garlic chili sauce, or siracha, or something like that

Stir often, bringing to boil. Reduce heat and simmer, bubbling, for at least 10 minutes to reduce. It will seem very watery in the beginning- but after a certain amount of time, it gets thick quickly! 

Step 4: Put it all together. I just do it in the giant wok, but you might want to do it separately in a bowl. Whatever works for you! Enjoy!

ps. You could also just use store bought teriyaki or stir fry sauce. You can't really ruin this recipe!
