Yellow Split Pea Vegetable Soup

Prep: not bad
Time: easy prep, takes a log time to cook
Taste: I love it.
From: my love of yellow split peas after I ate them made by my friend Dan
Note: they do take a while to cook... and require a lot of water/broth!


This recipe basically came about because I love yellow split peas so much that I could eat cups after cups of them, and... well... I thought that making them into a soup would at least spread them out a little. Infuse them with more water and veggies, at least. The end result was just as good as straight split peas!!

Yellow Split Pea Vegetable Soup

In a large soup pot:
1/2 onion, diced
3 carrots, chopped
3 stalks of celery, chopped
3 red potatoes, diced

Water sauté until soft. Add:

1 cup rinsed yellow split peas
4 cups water or broth

Stir and let simmer for 20 minutes. Then add:

2 cups water or broth
1 teaspoon salt
2 teaspoons ground mustard

Stir, cover, and simmer at least 40 more minutes, until split peas are very soft.

That's it!
