Chana Dal

Prep: Not bad for Indian food!
Time: Less than an hour!
Taste: THE BEST

Note: This can be an entire meal- no need to make other Indian dishes to go along with it!


Step 1: prepare the dal

Cook 3/4 cup yellow split peas in water, until done. For me, this took 3-4 cups water and about one hour. Split peas should be soft but not complete mush.

Step 2: Rinse spinach and set aside. 



I used an 11 ounce box of fresh baby spinach, but- that was a lot! Less can be used!

Step 3: the spices!

In a warm frying pan, melt 2 teaspoons of butter (I used Each Balance vegan butter). Add:

2 bay leaves
2 teaspoons cinnamon
1/4 teaspoon mustard seeds

Stir until seeds start to pop. Then, add:

1 small or 1/2 large onion, diced
1/2" ginger, minced
3 cloves garlic, minced

After onions are translucent, add spinach and "cook down." I added handfuls at a time, and ended up using a bit of water to make stirring easier. When spinach is almost done cooking, add spices:

1/2 teaspoon garam masala
1/2 teaspoon coriander 
1/8 teaspoon cayenne pepper 
1/4 to 1/2 teaspoon salt

I added a 1/2 teaspoon salt, but- it was a bit much! A little salty. So start with a 1/4 teaspoon and go from there. 

Once spinach is mixed well with the spices, add the cooked yellow split peas to the pan and stir. 




ENJOY! OH WAIT!!!! NOTE: 
Take out the bay leaves before eating! 
They taste terrible and are not intended for you to eat!!
