Time: easy to prepare in either crockpot or on stove top

Note: really, the guacamole makes it
Step 1: Decide on whether you want to make this on the stove top or crockpot.
Then, get your devices ready!
Step 2: Prep your ingredients:
small onion, diced
medium sweet potato, diced
1 sweet pepper, diced (red, orange, or yellow)
1 can of black beans, rinsed
1 can of plain diced tomatoes
1/2 cup dry quinoa, rinsed if you are into that
Vegetable stock or water- approximately 2 cups
2 teaspoons cumin
2 teaspoons chili powder
1/2 teaspoon salt, plus more if wanted
Step 3: Cook it up! Honestly I used to do this on the stove top, sautéing the onions, slowly adding the sweet potatoes, constantly stirring, etc. etc.
Now I just dump it all in a crockpot and cook on high for 5 hours or low for 7-8. Much easier.
Step 4: Serve! Highly recommended to serve with guacamole and chives as a garnish!
