Pesto

Prep: not too bad
Time: pretty quick
Taste: I'm not going to lie, it would be better with ton of oil
From: my brain after many internet searches
Note: you need a food processor!


In a food processor:

2 cloves of garlic
1/3 cup raw cashews, soaked 1-2 hours
1/4 cup walnuts (give or take)
a gigantic mound of fresh basil leaves, torn from the stems and rinsed
1/2 teaspoon salt
1 teaspoon oil, or more, depending on how you like it

That's it! Process until smooth. I like mine a little gritty. Note: don't go nuts with garlic unless you also plan on going nuts with lots of oil.

I serve pesto with rice pasta and chopped cherry tomatoes. My toddler LOVES it.
