Taste: ONE OF MY TOP FIVE FAVORITES EVER
From: a copy of a recipe from friend Beth :)
Note: You need a food processor for this one
Preheat oven to 350F.
Place in a food processor:
2 dates, pitted
2 cloves of garlic
1 teaspoon of dried or fresh rosemary
1/2 teaspoon salt
1 medium zucchini
then..
1 1/2 cups almond flour
1/2 cup oat flour
1/4 cup flax seed in 1/4 cup water
After complete mixing, drop onto greased cookie sheet. After cooking for 10 minutes, flip over and slightly flatten, cook for about 15-20 minutes more. Keep an eye out so they don't get too brown!
This picture shows a gluten free vegan banana waffle I made for my son, plus
my first attempt at making my own almond flour from straight almonds,
because I ran out of almond flour. It was so easy!!! I will definitely just do this from now on!
