Chili with Cauliflower Rice

THIS IS AMAZING AND INCREDIBLY FILLING AND BASICALLY NO CALORIES.




Ingredients/Directions:

In large soup pot, saute for 5ish minutes:

1/2 onion, chopped
1/2 green pepper, diced
1/2 red pepper diced

Then add:

1 can diced tomatoes, plain (15 ounces)
1 can diced green chiles (4 ounces)

1 teaspoon oregano
1 teaspoon cumin
1 teaspoon chili powder (I used Mexican chili powder)
1/2 teaspoon salt

Simmer for 10 minutes, then add:

1 can Kuner's pinto beans with mild jalapeƱo, drained
1 bag of Trader Joe's cauliflower rice (the bag I had was organic and frozen)

Simmer for another 20 minutes, until peppers are soft and spices are nicely melded.

Serve with guacamole!
