I just made this recipe up and IT DID NOT DISAPPOINT!
Ingredients:
3 or 4 very large orange peppers (or whatever color you want)
1 cup extra fine basmati rice
4 cups tomato sauce (I used homemade, but jarred would be so much easier)
1/2 cup pesto (I used my own homemade frozen pesto but knock yourself out using whatever)
1/2 onion chopped
11 ounce box or bag of Super Greens or spinach/chard/baby kale
1/2 cup slivered almonds
1/2 of one orange pepper, chopped small
Directions:
Soak the rice in a large bowl, draining and rinsing every 20 minutes for 2ish hours. Preheat oven to 400F.
Cut the peppers in half horizontally (use one of the halves to chop up for the filling). Remove seeds, stems, etc. Place the tomato sauce in a casserole dish, and the peppers on a clean separate plate.
Prep for filling!
Boil the drained rice in a small amount of water. Rice should be almost, but not quite done... it will continue to cook in the oven. While boiling....
