#1 Greece: dolmades, tabouli, hummus, salad


Dolmades

Ingredients:

1 jar of grape leaves (50-70 leaves)
1/2 cup rice (I like basmati, most prefer short grain)
1 small onion, minced
1 medium tomato, de-seeded and minced
1-2 tablespoons dried mint
1-2 tablespoons fresh minced dill
1/4 cup fresh minced parsley
salt & pepper 
lemon juice
oil & water 

Directions:

Honestly I need to make these again before I write perfect directions for them. I did not use oil, and, the grape leaves came out a little tough. The filling was fabulous though! Until then, you can google how to stuff them. Sorry!

Tabouli

Ingredients:

1 cup cooked quinoa
1 targe tomato, deseeded and minced
1 small cucumber, chopped small
1/2 cup fresh parsley, minced
1-2 tablespoons fresh mint, minced
4 green onions, chopped
salt & pepper
oil & lemon juice

Directions:

Mix all together. Add as much or as little salt & pepper, and oil & lemon juice as you like, to taste.


Hummus

Pictured hummus is from Trader Joe's. I find their Mediterranean hummus far superior to anything I can make (thus far). And yes, I am the kind of person who spends an hour de-shell-ing chickpeas before putting them in the food processor. It's just never as good or creamy as theirs. 

Salad


Ingredients: 

romaine lettuce
tomatoes
cucumbers
red onion
fresh parsley
lemon juice
salt & pepper

Directions:

Decide how much salad you want. Cut up ingredients. Mix together. Add Greek Dressing if you want. Knock yourself out, it's salad. Enjoy!
