#2 Norway: Norwegian Pancakes



Norwegian Pancakes REAL VERSION

Ingredients: 

6 eggs
1 cup white sugar
2 cups flour
1.5 cups milk
1/2 cup butter, melted in frying pan
1 teaspoon vanilla

Directions:

Combine, in order. Mix until lumps are gone. Be strategic about this, or lumps will abound (read: slowly add each new ingredient, and mix each very well). Pour 1/4 cup of batter into buttered hot frying pan. Lift pan and rotate to ensure batter is spread thin. When pancake begins to brown, flip and fry until done. Repeat.



Norwegian Pancakes OUR CURRENT VERSION, plus, halved.

Ingredients:

3 tablespoons ground flax seed, plus 1/4 cup water (let it sit to do it's thing)
1/2 cup brown sugar
1 cup Namaste pancake gluten free flour mix
3/4 cup almond milk
1/4 cup Earth balance butter, melted
1 teaspoon vanilla

Directions:

Same as above. It's harder with the special batter, but---- no gluten or lactose!

Serve with strawberries, maple syrup, other jam, butter... whatever you want! Roll them up and enjoy!
