#11 Germany: cabbage soup
Recipe loosely based on "One Acre Vintage Homestead" site on Pinterest. Very loosely!
German Cabbage Soup
Ingredients:
1 small onion, diced
2 carrots, chopped
2 cloves garlic, minced
2 red potatoes, chopped
6 cups of broth, or, water with 2 bullion cubes
2 bay leaves
1/2 head of green cabbage, cut into bite size pieces
Pinch each of:
dried parsley
dried oregano
black pepper
fennel seed
paprika
red pepper flakes
garlic powder
onion powder
Directions:
In a large soup pot over medium heat, sauté onions. Add carrots and garlic after a few minutes. Then, add potatoes, broth, and bay leaves. Summer until potatoes begin to get soft. Add the cabbage and pitches os sausage spices. Continue simmering until the cabbage is soft.
It's like sausage soup, without the sausage! Remove the bay leaves before serving. Yum.
