#12 Sweden: yellow split pea soup
I did a TON of reading on Scandinavian food, searching and searching for authentic dishes that did not have meat, dairy, or gluten. It was insanely difficult! Sweden and Norway are all MEAT MEAT DAIRY GLUTEN MEAT. AND SEAFOOD.
But, I found this, and I checked with my mother, who is Norwegian and Swedish. She said this really is "a thing" in Sweden. Thank goodness they get their legumes in occasionally. One website I found announced that Swedish people eat this soup every Thursday. I thought that was insane. Can you imagine all Americans eating the same thing one night a week? Anyway. It was very good! I usually make a similar soup using ground mustard seed, but the thyme spice was really delicious too. Recipe is derived from "Camilla" at "Power Hungry" on Pinterest.
Swedish Yellow Split Pea Soup
Ingredients:
1 medium onion, diced
2-3 carrots, diced
1 cup yellow split peas, rinsed
6 cups of broth, or water with 2 bullion cubes
1/2 to 1 teaspoon thyme
Directions:
Place diced onions and carrots is a medium soup pot over medium heat. Use oil or broth to sauté until medium-soft. Add the split peas and broth. Reduce heat to low and let simmer for up to one hour. Check and stir often, adding water in necessary. Add the thyme 10 minutes before serving.
If you have not cooked with yellow split peas before, well, they are weird. They bubble up a LOT and tend to stay hard for at least 30-40 minutes. I often have to add much more water to the pot to keep them hydrated. It seems like they are going to stay hard forever, and then they get soft! So, you just have to keep an eye out. I have burned many pots by ignoring them for too long.
