Persian Rice with Lima Beans and Dill
Ingredients:
Please note, this recipe is very easily halved, if you would like!
1 cup basmati rice, soaked and drained and soaked (etc.) for 1 hour
2 cups baby lima beans (I use 16 oz. frozen bag from Wegmans)
1/2 cup minced fresh dill
1 Tablespoon of butter (I use Earth Balance)
3/4 teaspoon of salt
Directions:
After rice has been soaked and rinsed, boil rice in 2 cups of water in a medium sauce pan. When rice is almost done, add lima beans. Add a small amount of water if necessary. The rice water should be almost totally absolved (there will be no draining later, so use it up!). Add dill, butter, and salt. Stir and simmer until water is totally gone.
Enjoy HOT or COLD! Alone, or over lettuce! With out without ranch dressing! So many options! So delicious!
