Potato Pancakes
Ingredients:
3 large red potatoes, skinned and shredded (or 5-6 small)
3 chices, chopped
2 tablespoons flaxseed with 4 tablespoons water
1/2 cup Namaste gluten free pancake/baking flour mix
salt & pepper
butter or oil for frying
Directions:
After shredding potatoes, place in strainer or bowl and squeeze with a few paper towels to remove moisture and starch. Believe me, this step works wonders!
In a large bowl, add flaxseed and water. Let it sit a minute to do it's thing. (Google this if you are confused.) Then, add potatoes, chives, flour mix, and a dash of salt and pepper. Mix until incorporated. Using your hands, can you make sticky balls? If not, add more flour mix until the consistency of the batter is conducive to making large meatball-kind-of-things.
Then, warm a frying pan. Add a spoonful of oil or butter. When sizzling, add a ball of dough. Let it sit a minute, then use a spatula to flatten. After frying a minute, flip. Fry until potatoes shreds are cooked through. Repeat.
Enjoy! Keller like dipping these in ketchup, despite my better intensions.
