#24 Belize: tostada with cortido
This was very, very, very good for being so simple. I found this recipe in the Belize News Post online. If you google it, you will find it has chicken and cheese and sour cream as well. But- I found it REALLY QUITE TASTY without any of that!!
On an unrelated note, I am really learning my geography by doing this. Belize is very close to Guatemala. Huh.
Cortido
Ingredients:
3 Tablespoons white onion, minced
1 teaspoon habanero or jalapeƱo pepper, minced
white vinegar
1/2 teaspoon salt
Directions:
Place minced onions, peppers, and salt into a half pint canning jar (or very small tupperware container). Pour white vinegar to cover. That's it!
Tostada
Ingredients:
flat hard shell corn tortilla (available in taco section of grocery stores)
refried black beans, canned or fresh, heated
salsa
tomatoes, diced
lettuce, slivered
cortido
Directions:
Layer the tortilla, beans, salsa, tomatoes, lettuce, and cortido. That's it. Simple and amazing!
