#33 Haiti: Fruit Salad
A little background on how I choose recipes:
I have a few international food websites that I read up on. When I find a recipe that I like, I google it to see if other similar recipes come up from that same country. If there are several, I know it is authentic! If it seems to just come from one obscure international site, I go back to the drawing (reading) board and research to find a different dish that I might try that is more authentic.
Well. With this recipe.... it was odd. At first, I came upon literally the same exact recipe a few times, word for word, ingredient for ingredient, on three different websites. But, then I changed my wording ("Haiti fruit salad" or "Haitian fruit salad" or "Haiti salad" and... I came up with a few variations. So, I'm 90% sure this is a legit recipe, but, not 100%.
Regardless- it is VERY GOOD! It COMPLETELY reminds me of Sunday dinner at Grandma's house when I was a kid! I'm usually a minimalist when it comes to fruit salads, but, if I am ever invited to a summer potluck, I will definitely bring this!
Haitian Fruit Salad
(this makes a salad for about three people... double or triple if you want to serve a crowd)
Ingredients:
15 cantaloupe melon balls
1/4 cup raspberries
5 strawberries, chopped into pieces
1/2 banana, chopped
10 chunks of pineapple
1 tangerine or 1/2 an orange, sliced
4 Tablespoons coconut milk
1 Tablespoon pineapple juice
1 Tablespoon lime juice
1/8 cup roasted peanuts
2 Tablespoons coconut flakes
Directions:
Combine all fruit in a bowl. In a separate small bowl, combine the dressing ingredients (coconut milk, pineapple juice, lime juice. Whisk to combine, then pour into fruit and stir. To serve, sprinkle with peanuts and coconut.
VERY GOOD.
