#35 Israel: fava bean spread


I wanted to love this. I really did. I've never like a middle eastern flavor that I did not LOVE. However, I guess??, I just don't like fava beans! Oh no, right??!!! I've never had them before.  And they definitely have a distinct flavor, that, super sadly, is not for me. I would totally make this again using chickpeas! Of course, then it would be called: hummus. Anyway, if you like fava beans, go for it. Or, use chickpeas! Recipe from: toriavey.com

Ful Madammash

Ingredients:

oil if you want
1/4 cup onion, minced
2 cloves garlic, minced
1 teaspoon cumin
1 can fava beans (the only can I could find at Wegmans was a 19 ounce Progresso can!)
1/2 cup water
1/4 teaspoon salt & pepper

for topping:
tomato, diced
onion, sliced thinly
fresh parsley, minced
red chili pepper flakes

Directions:

In a small soup pot, add oil (if using), onions, and garlic. Sauté until done. Add cumin, rinsed fava beans, and 1/2 cup water. Let simmer, stirring often, for 10 minutes. Add salt and pepper, and mash in the pot. To serve, place in bowl and decorate with diced tomato, onion rings, fresh parsley, and red chili flakes. Eat with pita chips or on other wrap with vegetables or falafel.
