#36 Tanzania: curried spinach
I work very hard to never waste food. And, I feel terrible whenever I might have to. Sadly, the first time I tried this dish, it was TERRBLE. I could not force myself to eat more than one bite. This is the second "food olympics" dish that I have have to re-make. I had a feeling that the first recipe I tried would not be good (it only had three ingredients- and they were weird)! And, turns out I was right. So, from now on, I really am only going to make things that I have a good gut feeling on, or, dishes that are highly and extensively reviewed.
Anyway. That being said, this version from Genius Kitchen is YUMMY!!!!!!!!!!! I have had spinach with peanut butter and asian spices before, but never African or curry. It did not disappoint! Yes, it is super weird, but, it is also super good. It felt like it needed other African dishes to go with it, but, I still have like 145 countries to get to, so, only one from Tanzania for now.
Mchicha (African curried spinach)
Ingredients:
1 teaspoon butter (I used Earth Balance vegan)
1/2 onion, diced
1 tomato, diced
1 teaspoon curry powder
8 ounces of spinach, rinsed and de-stemeed
1/2 cup coconut milk
1/4 cup peanut butter
salt if needed
Directions:
In large frying pan, sauté the onion and tomato in butter. Add the curry powder, and stir. Add the spinach and cook down for a few minutes. Add the coconut milk and peanut butter, stirring gently to fully incorporate. Add salt if needed (if using unsalted peanut butter). Simmer until spinach is soft and peanut butter is mixed throughout.
