#37 Zimbabwe: dovi (peanut stew)


Ever since I started being obsessed with African Peanut Stews, I have done A LOT of reading on all the different versions. Really, a ton of research. This one is very spicy!

Personally, when I make it again, I will leave out the tomato paste. I felt like it was overly tomato-y. However, it was still very delicious! I found this seemlingly-legit one from Heather Rodgers at blog.arousingappetites.com.

This is half the recipe, with some modifications, because, I find okra weird, and, I don't do much oil. If you want the original, double this, add okra, and oil it up! I also prepped this very different than the original version, so, look her up if it doesn't work for you!


Dovi

Ingredients:

1 small onion, chopped
2 garlic cloves, minced
1 hot red chili pepper, minced
2 carrots, chopped
3 cups broth (or water and bullion)
1.5 Tablespoons of hot chili sauce ( I used Huy Fong brand)
1/2 cup peanut butter
3.5 ounces of tomato paste
1/2 teaspoon cayenne pepper
salt & pepper
1 handful of spinach


Directions: 

In a medium soup pot, sauté the onion. Add garlic, chili pepper, and carrots. Stir and simmer using water or oil. When soft, add the rest of the ingredients except spinach. Stir and simmer over medium heat, and then reduce to low for 5 minutes. You may want to add more water if it is very thick! Then, add the spinach, and simmer 5-10 more minutes. Let sit for a while before enjoying. Keep a glass of water around! Spicy!
