#38 Chile: pebre and potatoes
I am really loving making different kinds of salsa-type condiments! This one- Pebre- was very, very good! I found it on Pinterest from lafujimama.com.
Pebre
Ingredients:
6 green onions, minced
1.5 roma tomatoes, minced
1 cup packed fresh cilantro leaves, minced
3 garlic cloves, minced
3 Tablespoons red wine vinegar
1.5 Tablespoons spicy red chili sauce (I used Huy Fong brand)
1 teaspoon red chili pepper flakes
1/2 teaspoon salt
water
Directions:
Place all ingredients in a medium (2 cup size) glass jar. Pour a small amount of water in, just barely covering the ingredients. Put the lid on the jar, and shake. Done!
Potatoes:
Dice up some red potatoes. Sprinkle with chili powder, salt, and pepper. Use spray oil, if you want. Roast in a toaster oven or regular oven until browned. Serve with PEBRE!!!! You will not be disappointed. Very spicy!
