#39 El Salvador: pupusas



I am bad at frying things. I can't seem to do it without filling the house entirely with smoke. I just... cannot figure out how to fry!  Anyway. I won't be making these again, but they were good! The dough for the pupusas is the same exact recipe as for tortillas, which, I can finally make without setting off the smoke detectors.


Pupusas

This makes five. If you want 10, double the recipe!

Ingredients:

1 cup maseca
3/4 cup water (start with 1/2 cup, then slowly add the rest... do NOT overwater)
1/4 teaspoon salt

1/2 can refried beans
1/4 cup salsa

oil for frying

Directions:

Combine the maseca, water, and salt. The dough should be pretty dry! I always use my kitchenaid mixer with the paddle for this.

Over heat, or in the microwave, combine the refried beans and salsa. 

Divide the dough into five equal parts and roll into balls. Flatten the balls and add add a spoonful of beans/salsa. Fold in half and seal. Fry. Good luck not coughing from smoke inhalation. Repeat.
