#40 Nicaragua: gallo pinto
Gallo Pinto is apparently a thing in two places: Nicaragua (using red beans) and Costa Rica (using black beans).
Gallo Pinto
Ingredients:
2-3 cups rice, cooked the day prior from 1 cup of raw rice
1 can of small red beans (not kidney beans), rinsed
1 small onion, diced
1 green or yellow pepper, diced (green for authenticity)
1 boullion cubes
water as needed
Directions:
Sauté the onion and pepper, using water or oil. Add the rice (which should be a little dry from being cooked the day prior), 1/2 cup water, and bullion cube. Stir to combine over heat. Add the beans and stir before serving.
Very easy! A little bland, but, good with salsa or avocado.
