#43 Papua New Guinea: sweet potatoes




According to my internet research, sweet potatoes are quite a thing in Papua New Guinea. There are over 400 different kinds!! That's insane! The word for the "sweet potato" in Papua New Guinea is "kaukau." You can read a ton about them and the history of sweet potatoes at the Arousing Appetite Blog (Cyrus Roepers wrote the lengthy, in depth, very interesting article).

I drastically simplified his recipe, but if you want to add fried shallots and fresh ginger, check his recipe out too!


Kaukau


Ingredients:

2 sweet potatoes
4 Tablespoons of coconut milk
1 Tablespoon orange juice
1/4-1/2 teaspoon cinnamon
1/4 teaspoon salt

Directions:

Wash the potatoes, and poke holes in them using a fork. Roast at 400F for one hour. Remove, and cut in half. Squeeze innards into a bowl, and add the rest of the ingredients. Blend, and, that's it!
