#44 Jordan: Arabic salad



I could eat Middle Eastern salads every day, and thanks to this food-making project, many days, this dream is achieved. I am learning SO MUCH about the various salads from different parts of Europe and the Middle East! This one has sumac. I love it! I chose not to use raw garlic in this version, but, you can always add that, or, green onion if you would like.

Arabic Salad

Ingredients:

1 tomato, diced
one handful of cherry tomatoes, sliced
1/2 seedless cucumber, diced
1/4 of a red onion, diced
1 Tablespoon fresh parsley, minced
1 Tablespoon fresh mint, minced
one handful of pita chips (I use Toufayan gf brand)
lemon juice
salt & pepper
sprinkle of sumac


Directions:

Combine. That's it! So good. Too good!
