#46 Peru: soltarito salad
This was very good. I will make it all summer! You can find dozens of different versions of this on line. I based mine off of the Peru Delights (.com) website. My mother, who has been to Peru, told me that Peru grows over 40 kinds of potatoes. I included three different kinds in this recipe, but honestly, one kind is completely enough! I just happened to have them around.
Solterito (Peruvian Chopped Salad)
Ingredients:
3 medium potatoes (I went with 1 red, 1 yukon, and 1 Russett)
1 cup corn
1 cup Lima beans (get it?? Lima is the capital of Peru)
1/4 of a red onion, diced
1/2 to 1 cup diced tomatoes
1 hot pepper, minced
2 Tablespoons fresh parsley, minced
3 Tablespoons red wine vinegar
salt & pepper
Directions:
Peel and boil the potatoes, and cut into chunks. Boil and drain the corn and lima beans, if not canned. Mix all the ingredients together. That's it. I enjoyed it both hot and refrigerated, honestly!
