#52 Morocco: assorted salads




Feggous Salad

Ingredients: 

1 cucumber, shredded or diced
1/4 teaspoon salt
1 teaspoon sugar
1.5 Tablespoon white vinegar
1 teaspoon oregano
1/4 cup orange juice

Directions: 

Combine.

Verdict: I didn't like it.


Carrot Salad

Ingredients:

3-5 carrots, grated
3 Tablespoons lemon juice
1/4 cup minced cilantro
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon cayenne

Directions:

Combine.

Verdict: I didn't like it.



Moroccan Taktouka


Ingredients: 

3 red bell peppers, roasted
1 Tablespoon oil
3 garlic cloves, minced
3 medium tomatoes, diced
3 Tablespoons cilantro, minced
1/2 teaspoon cumin
1/2 teaspoon cayenne
1 teaspoon paprika
1/4 teaspoon salt

Directions:

Roast the peppers in an oven or toaster oven. Remove tops and insides of peppers first. Warm the oil, then sauté the garlic. Add the rest of the ingredients and simmer. Dice the roasted peppers, and add. Simmer 10 minutes. Serve warm.

Verdict: It was ok. I think I would make it again!
