#53 South Africa: chakalaka
Ingredients:
1 onion, diced
2 garlic cloves, minced
1-2 tomatoes, diced
1 jalapeno, minced
1 carrot, grated
1 red pepper, diced
1 green pepper, diced
2 teaspoons curry powder
1/2 teaspoon thyme
1/2 teaspoon paprika
1 teaspoon cayenne
1/2 teaspoon ginger
1 teaspoon boullion
3 cups cabbage, chopped small
14 ounce can of baked beans
Directions:
Sauté the onion and garlic. Add the tomatoes, jalapeños, carrots, and peppers. Simmer until soft. Add all the spices, stir to combine. Then add the cabbage, and cook down for a few minutes. Add the beans, and simmer for 5-10 more minutes, until everything is soft.
Verdict: I'm glad I made it, but I won't make it again. It's basically baked beans with vegetables. As indicted by the recipe ingredients!
