#55 Nigeria: jollof rice
Oh, this was so good. I want to make it all the time! HIGHLY recommended!
I basically halved this recipe from a Pinterest recipe from: Ev's Eats (how to make jollof rice in five easy steps).
Ingredients:
1 cup long grain rice, soaked and rinsed and drained for 2 hours
1 small onion, diced
3 roma tomatoes, diced
1 habanero pepper, minced
1-2 Tablespoons tomato paste
water as needed
1 boullion cube
1/4-1/2 teaspoon curry powder
2 bay leaves
Directions:
Soak the rice. Really. And rinse, and drain. For 1-2 hours.
Add the onion to a medium soup pot. Sauté, then add tomatoes and habanero peppers. Simmer a few minutes. Add the drained rice and tomato paste. Cover with water. Let simmer until water is absorbed. Add more water as needed to finish cooking rice with the remainder of the ingredients. Let simmer 10-20 minutes more, until rice is soft and water is totally absorbed. Remove bay leaves before serving.
