#28 Scotland: shepherd's pie


Most shepherd's pies involve lamb, but, I don't like to eat lamb. Or anything with blood, really. So I substituted lentils and it was quite tasty!! Search "vegan shepherd's pie" on Pinterest for a gazillion options.

Ingredients

3 large red potatoes, peeled
3 cloves of garlic, minced
1/2 cup dry lentils
2 cups frozen vegetable mix (mine had peas, carrots, corn, green beans, lima beans)
1 boullion cube

Directions:

Boil the potatoes. Remove from the pot, and sauté the garlic. Add the potatoes back in and mash. Set aside.

Rinse and boil the lentils. When almost done, add the frozen vegetables and bullion cube. When the vegetables are done and well incorporated with the lentils, pour into a pie pan. Add potatoes on top. Make a fancy design with a fork, if you want. Broil in your oven for 10 minutes, until the potatoes are toasted. Sprinkle with rosemary, if you want.

That's it! Very easy!
